Pink Champagne Currant Jam

Mmmm.... one of the best parts about early summer is the currant harvest. You can do many things with your currants, but we can't get enough of this quick and easy jam recipe.

Ingredients
1 Cup of Currants
1 Cup of Sugar
Lime Zest
Instructions
1. Cook the Currants in a tablespoon of water and smash with a fork.
2. Once they are reduced to mostly liquid, add the sugar and some lime zest.
3. Continue simmering until the jam has thickened.
4. Test by placing a dab on a plate in the freezer for a few minutes and if it thickens up it’s done.
